cups fresh green beans or 2 boxes frozen French style green beans

1

small onion, chopped

6

tablespoons olive oil

2

tablespoons wine vinegar

1

teaspoon Dijon mustard

1

teaspoon salt

¼

teaspoon pepper

½

cup Parmesan cheese

1

cup Cherry tomatoes, halved

1

cup green or black olives

2

canned anchovies, chopped

Step 1

Cook beans until al dente. Drain well and cool. Add onions and toss to mix.Mix remaining ingredients to make a dressing in a small bowl. Pour over beans, add Parmesan cheese and toss to mix well. Arrange on a bed of lettuce and add tomatoes, olives and anchovies.
