Orange Almond Passion Cheesecake
1 cup graham cracker crumbs
2 tablespoons granulated sugar
5 pkgs. cream cheese, softened
2 cups granulated sugar
1/2 cup cornstarch
1 tablespoon almond extract
2 teaspoons orange extract
5 lg. eggs, room temp
1/2 cup orange juice
1 cup heavy cream
Preheat oven to 300.
In large mixing bowl, beat a little of the cream cheese, a little sugar, and the cornstarch on medium speed until smooth. Gradually beat in the remaining cream cheese and sugar, then the almond extract, orange peel and orange extract. Reduce mixer speed to low and beat in the eggs, one at a time, blending well after each addition.
Carefully pour in pan and smooth top.
Fill roasting pan halfway with hot water.
Bake 85-95 minutes or until set.
Remove cheesecake from waterbath.
Cool 1 ½ to 2 hours
Refrigerate 6 hours, preferably overnight
I love doing unusual designs with my cheesecakes. One of my favorites are the ones done in bundt pans. And it is a favorite with my customers too. I love the combination of orange and almond so Orange Almond Passion Cheesecake was born.
