Savory Stalked Crepes

Ingredients

For the crèpes (very thin pancakes)
1/4 teaspoon salt
2 cups water
4 tablespoons melted butter
Ingredients for the filling
Ham slices
Cheese slices
Tomato slices
Mayonnaise

Preparation

Sift the flour with the salt.

Make a well in the dry ingredients and pour in the liquids, which have been beaten together.

Combine with a few quick strokes.

Heat a 5 inches frying pan, greased with a very little butter.

Add a small quantity of batter and tip the pan to let the batter spread over the bottom.

Cook over moderate heat, turning crèpe once to brown lightly on under side.

Spread mayonnaise over a crèpe and choose one of the fillings, you go on alternating crèpe, filling.

Crèpes must be spread with mayonnaise on both sides, this is necessary so all the ingredients stick together and the stalk doesn’t disassemble when you cut it.

After finishing it let it rest for about 1 hour before serving.
