Peanut Butter Marshmallow Pinwheels

Ingredients

3 cups sugar
1/2 cup light Karo syrup
1/2 cup hot water
2 egg whites, beaten until stiff
1/4 teaspoon vanilla

Cook sugar, Karo syrup and water in medium sized boiling pan on medium-high until mixture begins to form small balls. When you pull out the spoon, the mixture is very stringy. Remove from heat.

While mixture above is cooking, begin beating 2 egg whites and 1/4 tsp. vanilla in a large bowl with mixer until stiff peaks appear. Let set until sugar mixture is ready.

Begin pouring sugar mixture into egg whites very slowly as you continue to beat with the mixer. Once all of the sugar mixture is added, turn off the mixer and stir by hand. Continue stirring the mixture until it is very hard to move by hand, don't let the mixture get too hard. The mixture should be a little soft (marshmallow like) and a little sticky.

Pour the mixture onto a table coated with butter and a small dusting of powdered sugar. Quickly pat out the mixture and lightly spread it out like biscuit dough with a roller. Don't roll it too thin. Quickly spread peanut butter all over mixture. Roll up log quickly, might still be a little sticky, just pat the log with powdered sugar as you roll it up.

Let the log sit and cool down to room temperature, then cut into pinwheel slices.
