Grain-Free Chocolate Chip Cookies
2 cups organic almond flour
2 tablespoons organic coconut flour
1/2 teaspoon baking soda (non-aluminum)
1/2 teaspoon pink himalayan salt
6 tablespoons vegan or organic grass-fed butter (or organic coconut oil)
1/4 cup organic evaporated cane sugar (or organic raw honey for non-vegan)
2 teaspoons organic vanilla extract
1/2 cup vegan chocolate chips (Enjoy Life Brand)
Combine almond flour, coconut flour, baking soda and pink himalayan salt in a medium bowl and stir until well combined.
Melt butter/oil of your choice (vegan butter, organic grass-fed butter or organic coconut oil).
Wisk butter/oil, cane sugar (or raw honey) and vanilla in a small mixing bowl.
Pour butter mixture into the dry mixture and stir until well combined until a soft dough forms.
Gently stir in the chocolate chips.
Scoop into small balls onto a baking sheet and then press the balls down flat.
Bake at 350 degrees for 12 minutes or until just golden brown around the edges.
Cool for 5 minutes before removing from the baking sheet.
