Fried Goat Cheese Medallions

Ingredients

11 ounces log of goat cheese log, well chilled
3 tablespoons bread crumbs
3 tablespoons olive oil
Favorite crackers

Preparation

Slice goat cheese in 1 inch medallions

Press into bread crumbs to cover. Place medallions in olive oil when hot. Brown on one side (2-3 minutes), turn over and brown the other side.

Remove from heat and place on crackers.

About

Nice when served with a batch of Pimientos de Padron and a glass of cold Vino Verde. Fruit and nut crostinis from Anjou Bakery (www.anjoubakery.com) are available at Whole Foods. They can be broken into 3’s and are a delicious base for the cheese.
