Saganaki...Greek Cheese Appetizer

Ingredients

2 slices kefalotyri cheese (each one approx. the size of a slice of bread and just as thi
2 ounces Ouzo, divided
1/4 cup flour
1 tablespoon olive oil
1 tablespoon butter
1/2 a lemon, cut in half

Preparation

Cut cheese slices in half, diagonally and place in a small container, and pour 1 oz Ouzo over it, cover and refrigerate for 2 hrs

After 2 hrs remove from fridge

In a small pan (do not use nonstick or coated pans) heat olive oil and butter over medium heat

Scoop flour onto a small plate

Take cheese pieces out of marinade, do not dry, and dredge all sides in the flour

Add to pan and cook one side until golden, then turn over and brown the other sides, this will take just a few minutes

Remove pan from heat and pour 1 oz Ouzo over top

Ignite with a lighter and allow flames to burn for a few seconds

As they start to die down squeeze the lemon over top to douse remaining flames

Throw lemon wedges into pan and yell "Opa!"...yes this is required!

Serve immediately, right out of the pan with greek pita wedges
