pound Tomatillos |
½ |
small Onion finely chopped |
1 |
Serrano chile finely chopped |
1 |
small Yellow chile finely chopped |
2 |
teaspoons Freshly-squeezed lemon juice |
2 |
medium Garlic cloves minced |
2 |
tablespoons Chopped cilantro |
½ |
teaspoon Salt |
edit Preparation
Step 1 |
Put tomatillos into a pan with water to cover and bring to a boil. Simmer gently for 10 minutes. Drain, cool, and core. |
Step 2 |
Cut tomatillos into small dice or finely chop in a food processor fitted with the steel blade. Place in bowl. |
Step 3 |
Add remaining ingredients and mix well. Cover and refrigerate. |
Step 4 |
This recipe yields 2 1/2 cups of salsa. |
