African Vegetarian Stew

Ingredients

4 smalls kohlrabi, peeled and cut into chunks
1 large onion, chopped
2 sweet potatoes, peeled and cut into chunks
2 zucchini, sliced thick
5 fresh tomatoes or 1 (16 oz.) can
1 (15 oz) can garbanzo beans with liquid
1/4 cup raisins
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 tablespoon ground cumin
3 cups water

Preparation

Combine all the ingredients in a large saucepan.

Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes.

Add hot sauce or pepper to taste if you prefer a spicy stew. Parsnips may be substituted for the kohlrabi. Serve the couscous separately, if desired.
