Ingredients

1 bunch ripe Plantains
1/2 cup finely chopped Tomato
1/4 cup finely chopped Onion
1/4 cup finely chopped Sweet/Green Pepper
1 cup grated English Cheddar Cheese
French Butter
dash White Pepper
Seasoning salt to taste

Preparation

Cook plantains in salted boiling water until tender.

Sautee tomato, onion, green pepper with butter and seasoning salt.

Mash plantains with sauteed ingredients and cheddar cheese.

Serve hot with beef, chicken or lamb stew.
