cup vegetable oil

tablespoons wine vinegar

tablespoon lime, juice or 1 tbsp lemon, juice

clv garlic, minced

teaspoon Dijon mustard

teaspoon ground cumin

¼

teaspoon salt

¼

teaspoon pepper

¼

cup chopped fresh mint

2

lrg tomato, sliced

1

onion, thinly, sliced

1

7 inch piece English cucumber, thinly, sliced

fresh mint, leaves

Step 1

In large bowl, whisk together oil, vinegar, lime juice, garlic, mustard, cumin, salt and pepper.

Step 2

Stir in mint.

Step 3

Add sliced tomatoes, onion and cucumber; toss gently.

Step 4

Make-ahead: Cover and refrigerate for up to 2 hours.)

Step 5

Garnish with mint leaves.
