cups cold rice

1

(15 oz.) can pinto beans, rinsed

drained

(15 oz.) can black beans, rinsed

drained

(10 oz.) pkg. frozen peas, thawed

1

cup sliced celery

1

med. red onion, chopped (½ c.)

(4 oz.) cans green chili peppers, drained

¼

cup snipped cilantro or parsley

1

recipe Garlic dressing (follows) or 1 (8 oz.) bottle or jar Italian dressing

cup white wine vinegar

¼

cup olive or salad oil

2

tablespoons water

¾

teaspoon salt

½

teaspoon garlic powder

½

teaspoon pepper

Step 1

In a 2 1/2 quart covered container combine cooked rice, pinto beans, black beans, peas, celery, onion, diced green chili peppers and 1/4 cup cilantro or parsley. Add dressing to rice mixture; toss gently to mix. Cover and chill several hours. (Special Note: If purchasing store bought salad dressing, "Paul Newman's" oil/vinegar dressing is recommended.)

Step 2

In screw top jar combine ingredients. Cover and shake well to mix. Makes about 2/3 cup.
