salmon steaks (1 inch thick) |

tablespoons butter |

tablespoons lemon juice |

cup champagne or white wine |

tablespoons chives (chopped) |
½ |
cup sour cream |

tablespoon Dijon style mustard |
1 |
tablespoon chopped chives |
1 ½ |
tablespoons sugar |

Step 1 |
Melt butter in large saucepan. Add everything but salmon. Stir to mix. |
Step 2 |
Add salmon. Cover and cook on low heat for 30 minutes. Serve with sour cream dill sauce on top or on side. |
Step 3 |
Combine all ingredients until blended. Refrigerate. Serve with salmon. |
Step 4 |
Be creative - try this on swordfish, halibut, blue fish, etc. |
