There ain't no malarkey about these; Irish Coffee and Cookies
1/2 cup shortening
2 tbsp instant coffee powder
1 tsp Cuppa Joe Spice
2/3 cup white sugar
1/2 cup chopped walnuts
1/2 tsp Irish Cream
3/4 cup all-purpose flour (or 1/4 cup each corn, rice and arrowroot flours if you are avoiding gluten)
Preheat oven to 350 F.
Grease cookie sheets.
In a medium bowl, cream together the shortening, sugar, coffee and Cuppa Joe Spice.
Beat in the egg, flour, vanilla and chopped nuts.
Mix until well blended.
Drop by teaspoonfuls onto cookie sheets
Bake for 10 to 12 minutes in the preheated oven, or until edges are golden.
Let cool on wire racks
