Lower the heat to a low simmer, add the butter and allow the polenta to cook, stirring occasionally, for 30 minutes. |

Polenta, a type of yellow cornmeal mush, is a traditional Northern Italian staple. It is delicious served with dishes such as Osso Bucco or on it's own. Other options to add are Parmesan cheese, cream, porcini mushrooms, etc..
