Gluten Free Macaroons Dipped In Dairy Free Chocolate Ganache

Ingredients

2/3 cup sugar
1/4 teaspoon salt
2 teaspoons vanilla
3 cups sweetened coconut flakes
1/2 cup SO Delicious coconut creamer
3 teaspoons instant coffee (to taste)

Preparation

Preheat oven to 350 degrees.

Beat together egg whites, sugar, and salt until very frothy, 3-4 minutes.

Stir in vanilla, coconut flour, and coconut flakes.

Roll the mixture into tablespoon-sized balls and drop onto well greased or parchment lined baking sheet.

Bake 10-15 minutes, or until tops are golden brown.

Place chocolate chips and instant coffee in a medium sized bowl

Heat the creamer over medium heat until it reaches a gentle boil.

Pour the warm creamer over the chocolate and coffee, whisk until smooth.

Dip the bottoms of the macaroons in the chocolate mixture.

Place macaroons chocolate side up on a large plate and refrigerate 1 hour, or until set.
