cups whole wheat flour

cup oat flour

cup cocoa powder

cup light brown sugar

tablespoon baking powder

cups buttermilk

egg whites

1 ½

teaspoons vanilla extract

teaspoon coconut flavored extract

topping

tablespoon coconut shredded

tablespoon light brown sugar

Step 1

To make the topping, combine the coconut and brown sugar until crumbly.

Step 2

Setaside.

Step 3

Combine the flours, cocoa, brown sugar, and baking powder, and stir to mix

Well. Add the buttermilk, egg whites, and extracts, and stir until the dryingredients are moistened.

Step 5

Coat muffin cups with nonstick cooking spray, and fill 3/4 full with the batter. Sprinkle the topping over the batter. Bake at 350 for 14 to 16 minutes, or until a wooden toothpick inserted in the center of a muffin comesout clean.

Step 6

Remove the muffin tim from the oven and allow it to sit for 5 minutes beforeremoving the muffins. Serve warm or at room temp.
