To make the topping, combine the coconut and brown sugar until crumbly. |

Combine the flours, cocoa, brown sugar, and baking powder, and stir to mix |

Well. Add the buttermilk, egg whites, and extracts, and stir until the dryingredients are moistened. |

Coat muffin cups with nonstick cooking spray, and fill 3/4 full with the batter. Sprinkle the topping over the batter. Bake at 350 for 14 to 16 minutes, or until a wooden toothpick inserted in the center of a muffin comesout clean. |
Step 6 |
Remove the muffin tim from the oven and allow it to sit for 5 minutes beforeremoving the muffins. Serve warm or at room temp. |
