cup Corn meal, yellow |

cup Flour |

teaspoons Baking powder |
½ |
teaspoon Baking soda |

tablespoons Sugar |
1 |
teaspoon Salt |
1 |
cup Buttermilk |
2 |
Egg, beaten |
1 |
cup Cheese, Monteray Jack |
2 |
Jalapeno peppers, diced |
¼ |
cup Butter, melted |

Step 1 |

Step 2 |
Mix wet ingredients, except melted butter, and add to dry mixture. |
Step 3 |
Add melted butter to mixture. |
Step 4 |
Grease muffin tins and fill 2/3 full. |
Step 5 |
Bake at 400 for 25 minutes. |
Step 6 |
You can add Jalaps to the batter or to the top after baking. |
