Oxtail Ragout

Ingredients

2 teaspoons Salt
1/4 teaspoon Pepper
1/4 teaspoon Paprika
1 cup Flour
2 pounds Oxtails, disjointed
1/2 cup Water
1 cup Onion, chopped
1 Clove garlic, minced
4 whl allspice
1 whl bay leaf
2 tablespoons Lemon juice

Preparation

Combine 1 teaspoon of salt, pepper, paprika, and flour. Roll oxtails in seasoned flour, brown thoroughly in hot fat. Add remaining ingredientsexcept lemon juice. Cover, simmer 3 hours, Remove allspice and bay leaf. Add lemon juice.

NOTES : Serve with hot, buttered noodles. Good with rice too.
