lb. chicken giblets |

onions, chopped fine |

c. diced celery |

c. parsley, chopped fine |

tsp. ground cumin |

c. raisins |

lb. cleaned chestnuts |
Cashew nuts, if desired |

Step 1 |
Saute giblets with butter, meat and chopped onions, celery, apple, parsley, salt and pepper, cinnamon and cumin until the onion is translucent. |
Step 2 |
Add chicken broth. raisins, pine nuts, chestnuts and cashews. |
Step 3 |
Add 1 1/2 cups rice (or according how much you wish to make). |
Step 4 |
Cook until rice is done. You may need to add more broth or water as it cooks, taking care not to scorch. |
