Carrot Cake Muffins

Ingredients

1/2 cup sugar
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cloves
1 (7 ½ oz.) jar junior carrots
1/2 cup salad oil
1/2 cup maple syrup

Preparation

Blend first 7 ingredients and set aside. Beat together the balance of the items listed, then add the dry mixture. Spoon the batter into 2 1/2-inch greased or papered muffin tins filling about 1/2 full. Bake at 350 degrees for about 20 minutes. (Test for doneness with toothpick). Makes about 18 muffins.
