[edit] Ingredients

can artichoke, drained, (the water-packed kind)

cup mayonnaise

clv garlic

1

cup asiago cheese, grated

¼

cup olive oil

Quails with Artichokes

1

pkt boneless quail

extra virgin olive oil

salt, to taste

pepper, to taste

1

can artichoke

Step 1

For the spread, process first four ingredients in a food processor until well mixed. Drizzle in olive oil, with processor motor running. Set aside.

Step 2

Quails with Artichokes:Rub the quail with a little bit of olive oil. Salt and pepper to taste. Place on grill, turning after 4 minutes; grill until done.

Step 3

Oil artichokes and place on the grill, turning often.

Step 4

To serve, place a quail in the middle of each plate, with a dollop of the spread on top. Spoon a bit of spread in a circle around the quail and top with the grilled artichokes. Serve with a sweet potato mash.
