Quails with Artichokes |

pkt boneless quail |

salt, to taste |

pepper, to taste |

Step 1 |
For the spread, process first four ingredients in a food processor until well mixed. Drizzle in olive oil, with processor motor running. Set aside. |
Step 2 |
Quails with Artichokes:Rub the quail with a little bit of olive oil. Salt and pepper to taste. Place on grill, turning after 4 minutes; grill until done. |

To serve, place a quail in the middle of each plate, with a dollop of the spread on top. Spoon a bit of spread in a circle around the quail and top with the grilled artichokes. Serve with a sweet potato mash. |
