Ingredients

2/3 cup oil
3/4 cup sugar substitute
2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons vanilla

Preparation

Beat eggs until thick, add oil and beat well. Add sugar, beat. Add the remaining ingredients and mix well. Chill at least 1 hour (or overnight). Drop by teaspoon on lightly greased cookie sheet Wet fork, dip in sugar substitute, press cookies. Bake 8-10 minutes in 400 degree oven.
