Homemade Caramel Sauce

Ingredients

1/4 cup Water
8 tablespoons Earth Balance Butter
2 teaspoons Gluten Free Vanilla
2 pinchs Salt

Preparation

Place sugar in a small, heavy sauce pan. Pour 1/4 C water evenly over top and turn stove on to medium heat.

Hold pan by handle and swirl occasionally until sugar has dissolved. Do not allow to burn.

Once sugar is dissolved, cover and bring to boil over medium-high heat. Boil 2 minutes.

Remove lid and continue to boil until the edges of the pan turn a deep amber color and the syrup thickens and begins to smoke, swirling occasionally. Approximately 3-5 minutes.

Remove from heat and gently whisk in butter and coconut milk.

Stir in vanilla and salt. If sauce becomes lumpy, set over low heat and stir until smooth.

Granulated white sugar can also be used if preferred. Palm sugar will result in a darker caramel sauce and give it a slightly less sweet/brown sugar type taste.

This caramel sauce is made with coconut milk so it’s dairy free and with palm sugar so it’s refined sugar free – soooo good!!!
