Wipe 350g mushrooms any variety even buttons this time.

Cook them with a couple of crushed garlic cloves in 3 tablespoons olive oil for 710 minutes.

Add the leaves from 3 healthy sprigs of tarragon a little salt and black pepper.

Stir in 225ml double cream or creme fralche if you prefer and warm slowly almost to the boil. Something to be served on rounds of thick toast.
