Tomato Sauce V.1

Ingredients

1 Red Chilli (deseeded)
Basil bunch
2 tablespoons Coriander
4 Cloves
2 teaspoons Black Pepper
1 teaspoon Salt
2 kilograms Chopped Toms

Preparation

Chop the onion, fennel and celery and add to a large pan with some olive oil and cook without colouring for 5 to 10 minutes.

Roughly chop the ginger, garlic, chilli and the stalks from the basil, add this to the pan along with the toms and 700ml cold water.

Simmer until reduced by half.

Add the basil leaves and blend until smooth, pass this twice and put back in the pan.

Add the sugar and vinegar and reduce to a sauce consistency.
