Passatelli (plural) is a pasta formed of eggs, Parmesan cheese, nutmeg and bread crumbs cooked in chicken broth that is typically found in the Emilia Romagna region of northern Italy.

cups bread crumbs |

cup generous 1 Parmesan cheese, freshly grated, plus extra to serve |

tablespoons butter, melted |

pinch of freshly grated nutmeg |

eggs, lightly beaten |
4 |
cups meat stock |

Step 1 |
Combine the bread crumbs, Parmesan, melted butter, nutmeg, eggs and a large pinch of salt in a bowl. The mixture should be fairly firm; if it is too soft, add more break crumbs. |
Step 2 |
Bring the stock to a boil in a pan. Hold a potato masher with fairly large holes over the pan and press the bread crumb mixture through it to form short, worm-shaped dumplings. Serve with Parmesan |
