[edit] Ingredients

1 ¾

cups bread crumbs

cup generous 1 Parmesan cheese, freshly grated, plus extra to serve

tablespoons butter, melted

pinch of freshly grated nutmeg

eggs, lightly beaten

4

cups meat stock

salt

Step 1

Combine the bread crumbs, Parmesan, melted butter, nutmeg, eggs and a large pinch of salt in a bowl. The mixture should be fairly firm; if it is too soft, add more break crumbs.

Step 2

Bring the stock to a boil in a pan. Hold a potato masher with fairly large holes over the pan and press the bread crumb mixture through it to form short, worm-shaped dumplings. Serve with Parmesan
