Penne With Roasted Vegetables and Goat Cheese

Ingredients

1 medium red onion, cubed
1 small zucchini, cubed
1 medium red pepper, cut into slices
1 cup button mushroom, sliced
1 tablespoon fresh oregano
1 28 oz can stewed tomato, diced
1/2 cup red wine
1/4 cup fresh basil
1/2 teaspoon black pepper
1/2 cup fresh parsley, chopped

Preparation

Preheat broiler to 350 degrees Fahrenheit.

In a large mixing bowl, combine the onion, zucchini, red pepper, and mushrooms. Combine the oregano and garlic powder and toss with vegetables. Place vegetables on a non-stick baking dish and drizzle with olive oil.

Set oven to broil at 350 degrees and broil vegetables for 5 minutes. Flip vegetables and broil another 2 minutes.

Cook pasta in 4 cups boiling water for about 8 minutes, drain and rinse.

Simmer the tomatoes, red wine, basil and black pepper in a large saute pan. Add the roasted vegetables, cooked pasta and parsley. Heat another 2 minutes and then add grated goat cheese. Mix well and serve.
