Spiced White Fish

Ingredients

Roughly chop and fry off red onions until soft and brown

Add cans of tomatoes

Add a squirt of tomatoes purée, quarter of a teaspoon of ginger and teaspoon of brown sugar and simmer

After five minutes, place the fish fillets in the sauce and continue to simmer

Sprinkle all purpose seasoning and salt/pepper to taste.

Simmer for another 10-15 minutes.

Serve hot with rice

Great quick and healthy meal. Very cheap too as white fish is always on offer. Reminds me of the Caribbean!
