Banana-Pineapple Pound Cake

Ingredients

3 cups flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
3 eggs, slightly beaten
2 cups bananas, mashed
1 cup oil
1 (8 oz.) can crushed pineapple, undrained
1 teaspoon vanilla

Preparation

Preheat oven at 350 degrees.

In a mixing bowl, thoroughly stir together flour, sugar, salt, and baking soda. Make 2 wells in center of dry ingredients.

Combine eggs, bananas, oil, undrained pineapple and vanilla. Add all at once to dry ingredients, stirring until well moistened.

Pour batter into a greased fluted or Bundt pan.

Bake the cake for about 1 hour, or until it tests done.

Take out the cake and allow it to continue to cook in the pan for 15 more minutes.

Remove and cool on wire rack.
