Japanese Fried Chicken

Ingredients

2 pounds chicken pieces -- (wings, legs, and thighs)
1/2 cup flour -- for dredging
1 teaspoon freshly ground black pepper
1/2 cup canola oil

Preparation

Place chicken in a shallow microwave-safe container. Pour the teriyaki sauce over the chicken. If you have time, marinate, turning once or twice, for about 30 minutes. Microwave on high for 3 minutes.

Combine the flour, salt, and pepper in a plastic container with a lid. Add the chicken, cover, and shake to coat thoroughly.

Heat oil in a nonstick frying pan over high heat. Add the chicken pieces and cook, turning frequently, until brown and crisp, 8 to 10 minutes or until done. Drain on paper towels.

Yield: about 4 servings.
