Cauliflower Mashed Potatoes

Preparation

Preheat oven to 450. When the oven is heated, place glove of garlic on a piece of foil until it becomes soft. When the clove is finished, remove skin and set aside.

Wash and cut the cauliflower into chunks.

Steam the cauliflower until soft and drain the water when finished.

While the cauliflower is steaming, saute the onions. I use the cooking spray to omit extra fat.

Put the cauliflower in a food processor with milk, onions, garlic and smart balance, blend until creamy. Depending on the thickness that you like you may want to blend less or more.

Place in a casserole dish and top with dill weed. You can use different toppings such as bread crumbs, cheese, paprika. Bake for 35 minutes or until top becomes browned and crispy.
