Escarole Noodle soup

cup Bring 6 water

inch head of escarole cut bite size pieces

cup sliced carrots

Step 1

Boil in a large pot. Reduce heat, cover and simmer 5 minutes until carrots are crisp-tender. Add 2 packages chicken-flavored ramen noodles and season packet and 1 can (16 oz.) kidney beans. Cover and simmer 4 minutes until noodles are tender. Stir in 2 tbsp grated cheese. Serve with crusty bread.
