Lomi-Lomi Salmon

Ingredients

2 ounces SALMON FILLETS (3-4 EACH)
2 teaspoons SEA SALT
2 SCALLIONS THINLY SLICED (GREENS AND WHITES)
1/2 teaspoon GRATED FRESH GINGER (OPTIONAL)
3 ROMA TOMATOES FINELY DICED

Preparation

REMOVE THE SKIN FROM THE SALMON.

DICE THE SALMON INTO 1/4 OR LESS CUBES.

COVER WITH THE SALT.

THINLY SLICE THE SCALLIONS. PLACE IN A BOWL.

ADD THE SWEET ONION, GINGER AND TOMATOES. MIX LIGHTLY. ADD THE SALMON AND MIX TO COMBINE.

LET STAND FOR 1 HOUR AND SERVE.
