ml Coconut milk |

Chicken breasts, boneless and skinned |

teaspoons Lemon zest, grated |

Lemon grass stalks, finely chopped |

Spring onions, finely chopped |

Fresh chillies, finely diced |

Lime, juice of |

tablespoons Fish sauce |
2 |
tablespoons Coriander leaves, chopped |

grams Coconut, toasted |

Step 1 |
Combine the chicken stock and coconut milk in a large saucepan and bring to the boil. Add the chicken pieces and lemon grass and zest, reduce the heat and simmer for 12-15 minutes. |
Step 2 |
Add the spring onions and chillies. Stir in the lemon juice and fish sauce, add the noodles. |
Step 3 |
Cook until the noodles are just soft and serve immediately. |
Step 4 |
Garnish with plenty of coriander and toasted coconut shavings. |
