[edit] Ingredients

cups all-purpose flour

½

cup unsweetened cocoa

1

teaspoon baking soda

½

teaspoon salt

½

cup dried cranberries *see Note

1

tablespoon hot water

2

teaspoons instant coffee granules

¾

cup buttermilk low-fat

cup sugar

cup honey

2

tablespoons vegetable oil

2

teaspoons vanilla extract

1

lrg egg

vegetable cooking spray

Step 1

Preheat oven to 350 degrees.

Step 2

Combine first four ingredients in a large bowl. Stir in cranberries, and make a well in center of mixture. Combine water and coffee granules; add buttermilk and next 5 ingredients, stirring well with a whisk. Add to flour mixture, stirring just until moist. Spoon batter into 8 x 4-inch loaf pan coated with cooking spray.

Step 3

Bake at 350 degrees for 50 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan.

Step 4

Cool completely on wire rack.

NOTES :* I used the same amount of dried cherries, which is more Black Forest-ish...

Step 6

Delurking for a day. Made this bread (more like cake!) today and couldn't wait for it to cool before we cut into it. Yummy!
