c. butter

lg. onion, finely chopped

lg. garlic cloves, minced

c. carrots, finely chopped

c. minced parsley

tsp. basil

1 ½

tsp. oregano leaves

bay leaf

c. chicken broth

Step 1

Choose either a 3-6 pound dressed fish or steaks or fillets cut 1 to 1 1/2 inches thick. Place fish in a greased 11x15 baking pan.

Step 2

Bring above ingredients to a boil, cover and simmer until vegetables are soft, about 10 minutes. Add 1/2 cup dry white wine, 1 (28 ounce) can Italian style tomatoes with juice, break up the tomatoes and cook until a thick sauce forms. Add salt and pepper and lemon juice to taste (go slow on this). Spoon sauce onto fish in pan. Bake, uncovered, at 375 degrees for 20-25 minutes for steaks or fillets, and 30-40 minutes for whole fish. Serves 6-8.
