Sweet Potato Puree

Ingredients

1500 grams Sweet Potato
200 milliliters Cream
50 grams Butter

Preparation

Roast the sweet potatoes with the skin on. When cooked remove the skin and process in the robot coupe until smooth.

Heat the cream in a saucepan, add the butter. When the butter has melted mix with the prepared sweet potato.

Season with salt and pepper. Use as required.
