Place ginger in a blender or food processor with remaining 2 cups water; whirl until pureed. Pour puree through a strainer into the pineapple juice, squeezing liquid from the pulp; discard pulp. Stir in lemon juice and sugar. Pour into a pitcher, cover, and refrigerate until cold. Stir well and pour into ice-filled glasses. |
