Yield: 4 servings

[edit] Ingredients

bunch spinach

1

Tbs. white sesame seeds

½

Tbs. mirin

½

Tbs. sugar

1

teaspoon soy sauce

[edit] Preparation

Step 1

Rinse the spinach until water runs clean.

Step 2

Bring a pot of water to the boil.

Step 3

Put the spinach leaves in the pot all at once. If you have baby leaves, boil them for 30 seconds and not any longer.

Step 4

If you have fully grown leaves, boil them for about a minute.

Step 5

Immediately drain the pot.

Step 6

Run cold water over the leaves to cool them off fast.

Step 7

Drain.

Step 8

Take the spinach leaves in your hands and squeeze out the water as much as you can.

Step 9

Toast the seeds briefly in a small dry frying pan.

Step 10

Crush in a small mortar and pestle or suribachi.

Step 11

Add the sugar and crush some more.

Step 12

Add the mirin and soy sauce and mix.

Step 13

Mix with the spinach.

Step 14

Add some whole sesame seeds on top for garnish.

You can substitute sesame seeds with tahini.
