bunch spinach |

Tbs. white sesame seeds |

Tbs. mirin |
½ |
Tbs. sugar |

teaspoon soy sauce |
[edit] Preparation
Step 1 |
Rinse the spinach until water runs clean. |
Step 2 |
Bring a pot of water to the boil. |
Step 3 |
Put the spinach leaves in the pot all at once. If you have baby leaves, boil them for 30 seconds and not any longer. |
Step 4 |
If you have fully grown leaves, boil them for about a minute. |
Step 5 |
Immediately drain the pot. |
Step 6 |
Run cold water over the leaves to cool them off fast. |
Step 7 |
Drain. |
Step 8 |
Take the spinach leaves in your hands and squeeze out the water as much as you can. |

Crush in a small mortar and pestle or suribachi. |
Step 11 |
Add the sugar and crush some more. |
Step 12 |
Add the mirin and soy sauce and mix. |
Step 13 |
Mix with the spinach. |
