Harissa (Maroccian Hot Sauce)
Soak peppers in hot water. Then drain. Remove stems, and seeds. In food processor or blender, add peppers, garlic, salt, and olive oil, and blend. Add coriander, caraway, and cumin, and process into a smooth paste. Transfer sauce into a clean glass-jar with lid. Pour some olive oil on top. Seal, and place in refrigerator. Keep sauce surface covered with a layer of olive oil, each time of use. Serve on anything, as desired. Tip: wear kitchen-gloves while preparing sauce.
