Split peas (yellow and green) |

(Black beans will turn soup grey!) |
Step 2 |
Sort and wash mix and place in large pot. Cover with water. Soak overnight. Drain water, add 4 quarts fresh water, ham, onions, garlic, salt, pepper, oregano, celery. Cover and bring to boil. Reduce heat and simmer about 2 hours or until beans are tender. Add potatoes and simmer until done. Remove from heat. Add parsley. Stir and allow to stand for 10 minutes. |
