Potato Scallops

Ingredients

4 lrgs potatoes peeled and thinly sliced
flour to dust
oil for deep frying
1 tablespoon plain flour

Preparation

Dust potato slices with flour and heat oil.

To make batter: Place flours in a bowl and whisk in enough water to make a smooth batter (not too thick) Dip potatoes into batter and fry in oil until lightly brown. Drain on absorbent paper. When ready to serve, reheat oil and refry until golden and tender. Drain and serve.
