Snow Peas In Oyster Sauce

Ingredients

1/2 teaspoon soy sauce
1/2 teaspoon salt
1 teaspoon sugar
1 teaspoon cornstarch
2 tablespoons oil
1 1/2 cups chicken broth
4 tablespoons oyster sauce
1/2 pound snow peas
2 tablespoons oil
1 teaspoon salt

Preparation

Cut the scallions into a 1-inch lengths and shred that ginger. Mix together in a large bowl the soy sauce, salt, sugar and cornstarch. Heat pan with the oil and add scallions and the ginger and saute together for 5 minutes. Add the chicken broth and simmer for 10 minutes. Add the thickening and simmer for another 2 minutes and add oyster sauce.

Wash and stem the snow peas, leaving the pods intact. Plunge them into a saucepan of boiling water for 60 seconds. Drain well. Heat pan with the oil and when it is very hot, saute the snow peas with salt for 1 minute. Remove from the heat and drain the peas well. Place on a shallow platter and cover with the very hot scallions mixture.
