cup vegetable oil |

eggs, slightly beaten |

cups ripe bananas, chopped |

cup pecans, chopped |

teaspoons vanilla |

inch can crushed pineapple juice, (8 oz.) undrained |

cup pecans, chopped |

pkt cream cheese, (8 oz.) softened |

pound confectioners sugar |

teaspoon vanilla |

Step 1 |
Heat oven to 350 degrees. Grease and flour 3 round pans, 9x1 1/2-inches. |
Step 2 |
Mix flour, sugar, baking soda, salt and cinnamon in a large bowl. Add oil and eggs. Stir until all dry ingredients are moistened: do not beat. Stir in bananas, 1 cup pecans, vanilla and pineapple. Divide batter evenly among pans. |
Step 3 |
Bake 25 to 30 minutes or until pick inserted in center comes out clean. |
Step 4 |
Cool 10 minutes; remove from pans. Cool completely on wire racks. Fill layers and frost side and top of cakes with cream cheese frosting. |
Step 5 |
Sprinkle 1/2 cup pecans on top of cake. Refrigerate any leftover cake. |
Step 6 |
CREAM CHEESE FROSTING:Beat cream cheese and butter in a large bowl on medium speed until smooth. |
Step 7 |
Beat in powdered sugar and vanilla until light and fluffy. |
