cups cake flour

teaspoon ground cinnamon

cup vegetable oil

eggs, slightly beaten

cups ripe bananas, chopped

cup pecans, chopped

1 ½

teaspoons vanilla

1

inch can crushed pineapple juice, (8 oz.) undrained

½

cup pecans, chopped

1

pkt cream cheese, (8 oz.) softened

1

stk butter or margarine, softened

1

pound confectioners sugar

1

teaspoon vanilla

Step 1

Heat oven to 350 degrees. Grease and flour 3 round pans, 9x1 1/2-inches.

Step 2

Mix flour, sugar, baking soda, salt and cinnamon in a large bowl. Add oil and eggs. Stir until all dry ingredients are moistened: do not beat. Stir in bananas, 1 cup pecans, vanilla and pineapple. Divide batter evenly among pans.

Step 3

Bake 25 to 30 minutes or until pick inserted in center comes out clean.

Step 4

Cool 10 minutes; remove from pans. Cool completely on wire racks. Fill layers and frost side and top of cakes with cream cheese frosting.

Step 5

Sprinkle 1/2 cup pecans on top of cake. Refrigerate any leftover cake.

Step 6

CREAM CHEESE FROSTING:Beat cream cheese and butter in a large bowl on medium speed until smooth.

Step 7

Beat in powdered sugar and vanilla until light and fluffy.
