Blueberry Brunch Cake

Ingredients

2 cups enriched flour
1 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup shortening
1 cup milk
1 pint blueberries, fresh or frozen
For the Topping:
1/2 cup flour
2 teaspoons cinnamon
6 teaspoons butter
1 cup flaked coconut
2/3 cup sugar

Preparation

Cut together sugar and shortening. Sift together flour, baking powder, and salt. Combine eggs and milk. Stir together all ingredients and fold in blueberries. Pour batter into a greased and floured 9x13 inch pan. Sprinkle with topping.

Make the topping: Mix together all ingredients until crumbly in texture. Sprinkle on top of cake batter before baking. Bake at 375 degrees for 25 to 30 minutes.
