Note: This recipe was submitted by Susan Finkel to the Four Seasons Hotel Seattle's Ultimate Holiday Cookie Contest. Her delicious recipe was runner up!

Here is a truly delicious holiday cookie that preserves some of the old fashion quality of shortbread with the Seattle signatures of great coffee and chocolate. They are beautiful, can be made into shapes or served in squares. And like some many holiday cookies, it is finished in sugar, so even though the cookie is not overly sweet, there is enough sugar to satisfy even the most ravenous sweet tooth.
