medium onion chopped

2

medium zucchini cut 1" cubes

2

can vegetable or chicken broth - (14 1/2 oz)

1

can crushed tomatoes - (28 oz) undrained

1

can Great Northern beans - (15 1/2 oz) drained, rinsed

tablespoons dried basil leaves

¼

teaspoon salt

¼

teaspoon freshly-ground black pepper

8

ounces dry cheese-filled tortellini uncooked

Step 1

Combine all ingredients except tortellini in crock pot. Mix well. Cover and cook on LOW setting for at least 6 hours.

Step 2

When ready to serve, increase heat to HIGH setting. Add tortellini. Cook an additional 20 minutes or until tortellini are soft.

Step 3

This recipe yields 8 servings.
