Ingredients
4 Skinless boneless chicken
Breast
2 tablespoons Vegetable oil
Salt -- to taste
1 1/2 tablespoons Fresh ginger root -- chopped
Or grated
1 can Low sodium chicken broth
2 teaspoons Fresh cilantro -- Minced
Preparation

In a large, non-stick skillet, over medium heat, heat oil. Add chicken and cook, turning until the surface turns white. Remove to shallow baking dish and sprinkle lightly with salt, if desired. Stir in ginger and cook for 1 minute. Sprinkle flour over surface of skillet and allow it to brown slightly. Gradually add broth, stirring constantly as mixture thickens.
