Vegan Cherry Cobbler

Ingredients

:Fruit:
1 teaspoon vanilla extract
1/2 cup sugar
:Batter:
2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup sugar
1 1/2 cups soy milk

Preparation

Combine all fruit ingredients in a saucepan and stir over medium heat until sugar is dissolved; remove from heat and set aside.

Combine dry batter ingredients; add wet ingredients and whisk until mixture resembles cake batter.

Place cherries in the bottom of a greased 9" x 9" pan. Pour batter over the top.

Bake at 325 degrees for 50-60 minutes or until batter is firm to the touch and a toothpick inserted comes out clean.
